- 2 lbs. peaches
- 2 Tbsp. fresh lemon juice
- 4-1/2 cups sugar
- 1 box Sure-Jell premium fruit pectin (do not substitute another pectin in this recipe; if using a different pectin, follow its manufacturer’s directions on the box.)
- 3/4 cups water
Peel, quarter and gently mash peaches with a potato masher or chop into a fine dice. Add lemon juice and sugar, toss together and let them sit for 10 minutes. Meanwhile, bring pectin and water to a boil. Boil 1 minute, stirring constantly. Add this mixture to the fruit mixture and stir for at least 3 minutes, until sugar is completely dissolved.
Ladle into 1-cup glass or plastic jars, leaving 1/2 " head room at the top of he container. Cover and let stand for 24 hours at room temperature to set.
Freeze up to 1 year or hold in refrigerator up to 3 weeks.
