Ginger Miso Dressing


2-4 teaspoons grated fresh ginger
1-2 garlic cloves
1 tablespoon white miso
1 cup salted, roasted almonds
1 tablespoon tamari sauce
Juice and zest of half a lemon
Pinch of salt, optional
Enough water to blend (I start with half a cup and add about half a cup more as the motor is running, then keep adding by quarter cups until it is as thin as I’d like)

Whiz this up in a blender or food processor. Taste and adjust for salt and sour as needed with either more tamari or some salt, or add some additional lemon juice.
