This is a beginner’s basics class to get you more comfortable handling your kitchen sharps. You’ll learn how to hold and work with a chef’s knife, a bread knife and a paring knife. You’ll learn to make the cuts most often called for in recipes, like slice, dice and chop. You’ll also learn how to properly care for and store your knife, and choose the right knives for you. We’ll also discuss smaller tools like kitchen shears, the microplane, the mandolin, the zester and more. Recipes will include: Fennel, Apple and Onion Salad with Walnuts and Herb Dressing; Crudites with Sauce Remoulade; Lacy Parmesan Cheese Crisps and Herbed Chevre with Crostini. Each dish will be paired with a wine from the Pacific Wine and Kitchen cellar.
The cost is $55 for this hands-on class, or you may purchase 2-3 classes in series for $50 each. After class, participants can browse the shop for glorious gadgets and ingredients, or select a bottle of wine. A 10% discount coupon for these purchases is given to every participant.
